- La ricetta delle brioche caramellate: 🌾 - 500 g farina tipo 0 forte (14 proteine) - 200 latte intero - 12 lievito di birra fresco - 1 uovo intero + 40 g tuorlo - 85 zucchero - 10 sale - 15 miele - 90 burro - baccello di vaniglia (opzionale) 🍭 per il caramello: - 250 zucchero - 50 acqua 🥛 per la farcitura - 250 panna - zucchero q.b PROCEDIMENTO: - impastare la farina con il lievito ed il latte e l’uovo intero Quando sarà tutto ben assorbito inserire un tuorlo alla volta attendendo che quello precedente sia assorbito e infine incordare l’impasto - inserire miele , zucchero e sale in più volte Alla fine l’impasto dovrà essere ben incordato - inserire il burro e la vaniglia in circa 3 volte e chiudere l’impasto, prima in macchina poi sul banco con delle pieghe e riporre a lievitare fino ad una volta e mezza il suo volume iniziale - formare palline da 50 grammi circa e lasciarle lievitare al doppio del volume in luogo caldo e coperte - spennellare con tuorlo e latte e infornare a 180 in forno statico finché non saranno dorate (circa 15 minuti) - mentre si raffreddano su una griglia montare la panna e zuccherare a piacere In un pentolino , a fiamma dolce, sciogliere acqua e zucchero finché non diventeranno caramello e, facendo molta attenzione a non bruciarsi, trasferire tutto in un contenitore e immergere la parte superiore delle brioche - tagliarle a metà e riempire di panna e mangiarle!1
